Fried rice – waste nothing!
Fried rice is a perfect dish for using up almost all leftovers in your fridge. Fry yesterday’s leftover rice in a hot pan with anything you fancy, e.g. meat, fish, vegetables, tofu or eggs.
Ingredients
- about 6 dl of boiled, refrigerated rice
- oil for frying
- 1–2 onions
- 2–3 cloves of garlic
- (1 tbsp of grated ginger)
- vegetables, fresh or frozen
- about 200 g of minced meat, chicken, shrimps or tofu
- (50 g of bacon, pepperoni or chorizo, cut into strips)
- 1–2 eggs
- 1–2 tbsp fish sauce
- 1–2 tbsp sesame oil
If you are using uncooked minced meat or chicken, fry it in the pan first and put aside. Fry the tofu as well until crispy.
Peel and chop the onion and garlic. Peel and grate the ginger (if using it). Dice the vegetables. Cut the sausage into strips (if you have chosen to use some).
Heat up the oil in the pan and sauté the onion, garlic and ginger in the oil. Add the diced vegetables and bacon or sausage strips. Fry for a couple of minutes.
Add the rice and fry until hot. If you have chosen to use frozen vegetables, add them and heat. Add the minced meat, chicken, shrimps or tofu.
When the rice is hot, push it to sides of the pan. Beat the eggs lightly in a bowl and pour the mix in the middle of the pan. Scramble the eggs and mix them together with the rice.
Season with fish sauce and sesame oil to taste. If you like, add a fried egg on top.
